I made some vegetable stew for dinner today. A simple mirepoix base with some edamame and a hint of tamarind. I also made some chocolate cupcakes for dessert using my low-carb recipe. After computing the carb and fiber content, I gave myself a bolus and tucked into dinner. Two hours later, I went low. Although insulin dependent diabetics use insulin to carb ratios to compute how much insulin to take, things don't work out all the time. Sometimes, we go low.Sometimes, we go high. In spite of the math, the diligent carb counting and the use of short-acting insulin, diabetes has a mind of its own. Managing it is more an art than a science.

There is no cure for diabetes, yet.

Update: Recipe for the vegetable stew

1/2 cup chopped celery (0.4 grams carb/0.25 grams fiber)
1/2 cup chopped carrots (6 grams carb/1.8 grams fiber)
1 cup chopped onion (8 grams carb/1.1 grams fiber)
1/2 cup sliced mushrooms (1.2 grams carb/0.3 grams fiber)
1/2 cup diced peppers (1.6 grams carb/0.2 fiber)
1/4 cup edamame(10 grams carb/3.8 grams fiber)
1 teaspoon finely chopped garlic (1 gram carb)
1/2 teaspoon tamarind paste (1 gram carb)
1/2 teaspoon finely grated ginger (1.3 grams carb/0.2 grams fiber)

Sweat the celery, onion and carrot slices with a touch of olive oil in medium heat. Once the onion slices turn translucent, add the mushroom slices, edamame, pepper slices, garlic, ginger and the tamarind paste and stir well. Add a pinch of salt and freshly grated pepper, along with two cups of water and continue to cook on medium for about 30 minutes. Serve hot. Makes enough stew for three people.

For this plating I took inspiration from the culinary olympics in Germany and attempted to create one of their dessert platings. My piping could have been thinner but in the rush to plate I ended up with a thicker line. The dessert is a chocolate mousse with shock temper chocolate around the sides topped with a chocolate triangle tuile. The side dessert is a chocolate/hazelnut feuilletine base. Topped with milk chocoate mousse and a chocolate butterfly on top.
